Spring Menu: Nourishing Sweetness

In spring, sweet flavors take center stage to gently nourish the liver and fortify the spleen. Highlights include Stir-fried Imperial Bird's Nest with Fresh Crab Meat and Egg, which hydrates and invigorates the spleen, Smoked Free-Range Chicken with Green Tea Leaves, which warms the body and is especially good for the liver and kidneys, and a signature Double-boiled Loach Soup with Artichoke and Sea Conch that helps dispel dampness and detox. Throughout the meal, palate cleansers of spring greens will be served, including fresh toon sprouts, malantou greens, and crisp spring bamboo shoots.
